Gluten Free Diet Information For Celiac Disease

Many people who begin a gluten free diet soon realize that there is a lot of gluten free diet information out there. Having such a large volume of information is great, however it can be overwhelming. One of the most over looked problems people find when they are looking for gluten free diet information are dietary/nutrient deficiencies associated with celiac disease. Most people who have Celiac disease suffer from dietary/nutrient deficiencies.

The two main reasons that people who have Celiac disease suffer from dietary/nutrient deficiencies are:

1. A strict GF diet can leave some people undernourished as they remove gluten from their diets but do not eat enough food in the process of removing it.
2. People with celiac disease often have damaged small intestines. This damage prevents vitamins and minerals from being absorbed by the body creating a deficiency.

People with celiac disease are at higher risk for nutritional deficiencies. Men and women who have been diagnosed recently with Celiac disease often find that they have bone density problems, B vitamin, iron and folic acid deficiencies. Adding to the problem of people with celiac having dietary/nutrient deficiencies is that many gluten free foods are not fortified with added vitamins and minerals like foods that traditionally contain gluten, such as cereals and crackers.

Some studies have even shown that most gluten free products are naturally lower in B vitamins, magnesium, iron and zinc. These dietary/nutrient deficiencies are a serious problem but they are a problem that can be easily diagnosed and solved.
